What is it

Roselle (Hibiscus sabdariffa) is a hibiscus grown for its fleshy, deep-red calyces, the cup of sepals that wraps the seed pod after the flower fades. In Andhra and Tamil Nadu its sour leaves are cooked as gongura and pulicha keerai.

These are whole roselle calyces, sun-dried to keep their deep colour. Steep a few for a ruby-red cup, hot or iced.

How to Use It

To brew: Steep 3 to 4 whole dried calyces in a cup of freshly boiled water for 5 minutes, then strain. Add a little honey or palm jaggery if you like. Enjoy one cup a day.

Storage: Keep in an airtight container, away from heat, light and moisture.
